Best Dishes Eater Editors Ate This Week: October 28

The editors at Eater LA dine out several times a week, if not per day, which means we’re always encountering standout dishes that deserve time in the limelight. Here’s the very best of everything the team has eaten this week.

Short-lived Japanese skewer spot Kushiba has made way for A Tí, a new modern Mexican bar from Bestia’s former chef de cuisine, Andrew Ponce. The restaurant popped up around town, with residencies at restaurants like All Day Baby, before settling into its current Echo Park location. Ponce has put together a tight menu with a handful of tacos, tostadas, and mains like a duck mole. While at A Tí for a friend’s birthday (and World Series watch party) this weekend, I opted for the al pastor taco. The base of the taco is a pliant blue corn tortilla, to which a small pile of spiced, tender pork is added. On top is a cool tomatillo avocado salsa and juicy hunks of pineapple that mimic the flavor of a street taco topping. Honestly, I wish I would’ve ordered more. 1498 W. Chef Kiminobu Saito’s steady approach to nigiri rides the line between classic Edo-style and the now decadent omakase familiar to Angelenos that fills spaces from Tarzana to the Golden Triangle of Beverly Hills. At Sushi Note in Beverly Hills, Saito’s longtime apprentice Earl Aguilar serves at a subterranean counter, but here in Sherman Oaks, Saito holds court with two other sushi chefs preparing one of the Valley’s best sushi menus. Like the fluid saxophone playing on Sushi Note’s sound system, Saito weaves around the seasonal fish offerings of the night with technical prowess. The latter half of a recent omakase featured a stellar shiro ebi, baby Japanese shrimp topped with salty pops of caviar. The creamy shellfish was further amplified by wine director Ian Lokey’s pairing with Vilmart Champagne, offering glazed pear notes and an eager effervescence. At the Michelin-starred tasting menu restaurant Chez Noir in Carmel-By-The-Sea, some of the most stunning bites are served at the very start when palates are primed for flavors that fire on all cylinders. The restaurant from hospitality pros Monique Black and her husband chef Jonny Black occupies a gorgeous building that feels lived in even though it is an entirely new build. The move is to arrive for an early dinner and bask in the dining room’s immaculate golden hour glow while enjoying a well-crafted cocktail with a few small nibbles. Among the parade of amuses, including chilled and grilled oysters and delicate toasts flanked with local anchovies, was grilled Monterey abalone. Superstitious? Maybe, but I will say that the Dodger doughnut from Eagle Rock favorite Colorado Donuts was not only delicious but did seem to correlate with a Game 1 World Series win (via grand slam walk-off, no less). I ate one that was leftover before Game 2, and that worked out well, too. Yeasty, puffy, and full of magic?
