What’s fresh at St. Louis-area farmers markets this week

This week at area farmers markets we are seeing the first tomatoes of the season. You will also find head lettuce, fresh mushrooms, spinach, radishes, turnips, microgreens, snap peas, edible flowers, foraged ramps, carrots, salad mix, green onions, strawberries, peas, rhubarb, beets, asparagus and fresh herbs. To help you use those beets, here is a recipe from a previous Let’s Eat section for Borsch, a soup that could be served hot or cold.
